Ingredients:
-Boneless mutton 500g
-Water 2 Cups
-Adrak lehsan paste (Ginger garlic paste) 2 tsp
-Iodized Himalayan pink salt ½ tsp
-Cooking oil 1 tsp
-Cooking oil or butter 3-4 tbs
-Maida (All-purpose flour) 2 & ½ tbs
-Tomato paste 2 & ½ tbs
-Kali mirch powder (Black pepper powder) ½ tsp
-Paprika powder 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp
-Iodized Himalayan pink salt ¼ tsp
-Cream ½ Cup
-Cheddar & Mozzarella cheese 2-3 tbs
-Hara dhania (Fresh coriander) chopped handful
Direction:
-In a wok, add mutton & water. Bring it to bowl, remove scum
-Add ginger garlic paste, pink salt, & cooking oil. Mix well.
-Cover & cook on low flame until tender (40-45 minutes)
-Remove cover, take out mutton pieces, (reserve stock for later use).
-Let the mutton rest for 10 minutes then shred it.
-In a wok, add cooking oil & heat it.
-Add all-purpose flour, mix well & cook on medium flame for 30 seconds.
-Add reserved stock gradually (approx. ¾ cup), mix well & cook on medium flame for 1-2 minutes.
-Add tomato paste, black pepper powder, paprika powder, cumin powder, red chilli powder, pink salt, mix well, cook on medium flame for 2 minutes while mixing continuously.
-Add shredded mutton, mix well, add remaining stock gradually, mix well, cook on low flame for 2-3 minutes, mix in between,
-Turn off the flame, add cream, mix well, turn on the flame, cook on low flame for a minute.
-Add cheddar & mozzarella cheese, cover & cook on low flame for 2-3 minutes.
-Remove the cover, add fresh coriander, serve with naan & salad!
